The Cazuela, Almost the Universal Cooking Pot

Flameware Cazuela – Large. Cazuela, in Spanish, means cooking pot, and that’s probably the best description for them.  They come in all sorts of shapes and sizes, from one person serving dishes to large paella cooking pots.  I’ve picked 2 sizes, a smaller one about 9 inches in diameter, and this, which is about 11-1/2 inches in diameter.

I make the Flameware Cazuela – Large with straight sides because so many dishes call for frying some ingredients (like onions, garlic  and browning meats).  I use a handle similar to what I put on the Grill Pan since many people were also using their cazuela in the grill and the log handle was prone to getting in the way. The side handles make lifting off the stove with hot-pads a little easier since this pot usually ends up pretty full of deliciousness.

I have also returned to forming the rim with a pouring “spout” at popular request.

Cookware That Doesn’t Get In Your Way

Your NewClay Pottery Flameware Cazuela – Large can go to the table for serving, and in the dishwasher for cleanup.  I don’t make a lid for them because of the intricacies of making flameware, but they are readily available online, and some come with a glass insert that is handy.  Look for “universal lid”.  

Flameware is less fragile than earthenware, and not at all sensitive to heat.  It is fully vitrified so it can be scrubbed with soap and any scouring pad.  Use any utensils including metal. And it is surprisingly light … nowhere near the weight of cast iron, and only slightly heavier than good stainless.

Flameware Cazuela – Large is Guaranteed, lead-free and non-toxic.  It doesn’t absorb flavors, moisture or fats. Unlike earthenware, it can be put away damp.
