Ceramic is known for its ability to bake prize-winning pies, and stoneware is the best ceramic to use. Most dense and less brittle, it handles a busy kitchen. My pie baking dishes start with a generous 7-inch bottom (standard size, and about 1-1/2 inches deep ( a bit deeper than normal, but, then, I like pie. Sometimes I flute the rims, your choice.
For some reason, and pie bakers tell me it’s because of the ceramic, these pie dishes make an acclaimed pie. The clay spreads the heat and doesn’t allow hot spots.
