Turkey Dressing (Make Extra)

TURKEY DRESSING

  1. Pre-cook 1 cup wild rice with 2 cups water. (2 cups rice to 4 cups water if you want it for soup later) Simmer until water is absorbed

  2. Sauté
    1 medium onion, diced
    2-3nstalks celery, diced
    Can also include red pepper
    Cook 1 lb pork sausage I use Jimmy Dean Regular or hot

  3. Add sauté to sausage

Chopped apple,  1 large, 2 small, diced
mushrooms, ½ to 1 lb chopped
dried apricots, ½ to ¾ cup chopped
sliced water chestnuts, use water in dressing 1 can
Dried Cranberries  ½ cup

  •  Bread cubes, 1 bag. if seasoned cutback on following:
  • Wild rice (cooked, above)
    Poultry seasoning (or use mix of sage, thyme, rosemary, marjoram, nutmeg (to taste but I like it “sagey”)
    Plus extra sage to taste,
    Allspice1/2 – ¾ tsp
    Cinnamon ½ tsp
    Pepper and/or Aleppo pepper  to taste

  • Add chicken stock and butter as needed to wet the bread cubes  probably 4=6 cups.

Freezes very well if there’s any left. I stuff both ends of the turkey, and bake the extra in a bread tin for an hour or so.
